— Went to town
We took it easy this morning and I had my normal breakfast. I did some computer work, then we packed up our laundry and computers and left in the Jeep around 10:33.

Panko-Crusted Pork Chops

  • 2/3 cup flour
  • sea salt and freshly ground pepper
  • 6 tbs Dijon mustard
  • 3 tbs water
  • 1 cup panko bread crumbs
  • 2 tsp dried parsley
  • 1 tsp dried thyme
  • 4 (5- to 7-oz.) center-cut bone-in pork chops
  • 3 tbs canola oil
Combine flour, salt, and pepper in a gallon-size Zip-Loc bag. Combine mustard with water in another gallon-size Zip-Loc bag. Combine bread crumbs, parsley and thyme on a plate. Dredge pork chops in flour to coat both sides. Dip pork chops in mustard sauce, coating all sides. Dredge in bread crumb mixture pressing it in to coat all sides. Heat oil in a large skillet over medium-high. Cook chops about 5 to 8 minutes per side, adjusting heat under skillet to prevent burning.

We went to the Crested Butte Laundry around 11:10 to do our laundry. We went online through an open Wi-Fi network while the machines were doing their thing. J struck up a conversation with an interesting guy sitting nearby who reminded her of her cousin. He's an electrical engineer with a Ph.D. and has been traveling around the US for about two years after the contract he was working on was cancelled. He told us about a great meadow full of wildflowers along the West Maroon Pass trail. My dryer didn't put out much heat if any on the Low setting, so after letting it run longer than usual on that setting I broke down and ran for a few minutes on Medium to dry things off. We left around 1:05.

We went to Maxwell's Restaurant in Crested Butte for lunch around 1:15. I had a Turbacdo (Smoked Turkey Breast, Bacon, Avocado, lettuce, Tomato, Sour Dough Bread) and a pint of New Belgium 1554. J had a Warm Goat Cheese Salad (Spring Greens, Pistachios, Dried Black Mission Figs, Sweet Onion and White Balsamic Vinaigrette, Pancetta/Shallot Jam). We both enjoyed our food — the Turbacdo (Turkey, bacon, and avacado) was much better than the Italian Stallion I had on July 14, 2010.

Went to the Crested Butte Public Library around 2:25 to use their free Wi-Fi. I started to work on a blog entry. J's iPhone update took a long time to download, and after she installed it, she got AT&T reception on it for the first time since we've been here. We left around 4:15.

We returned to the RV around 4:30 and it was 87°F (31°C) in the RV — yuck! J had AT&T reception on her iPhone at the RV now too. I processed two images for the blog.

We had dinner at 7:15 of Panko-Crusted Pork Chops and green beans. The pork chops were tasty. J said she'd try making it with pork tenderloin next time so we won't have to worry about the hidden bones.

After dinner, I processed two images for the blog then finished the blog entry. I looked up information about the West Maroon Pass trail so we could check it out tomorrow.
